The Suo Seto region takes pride in Japan’s leading catch of conger eel (Hamo).
The conger eel’s taste is representative for summer and especially the conger eel of Suo Seto is shipped to the Kansai area and receives favorable reputations.
In the producing area Hofu, a ”Hamo cram school”has been established by the restaurants of the city. Here research on conger eel dishes continues in order to make everyone experience the taste of Tenjin Eel.
